Dishes change with the season, but typical Tujia home-cooking includes:
- Tujia smoked bacon with garlic sprouts — Xiangxi’s most famous ingredient, smoked over fruitwood

- Stir-fried wild mountain vegetables — seasonal greens you will not find outside Hunan
